By starting from the room's center you are guaranteeing that the irregularities of the room will only be shown by the flooring in the corners and against the walls. These are the least noticeable in any room.

It hides irregularities much better than regular wood flooring and offers a creative person a unique design for their home without having to pay for custom wood.
